Baked Honey Cornflakes

Looking for CNY cookies recipes???
Well, if you have no time to bake anything that is too much
of a hassle,
then this recipe is for you!

Its so simple that even if you are a first-time baker...you will
still get people drooling over your cookies.

Preparation time takes only abt 20 mins :)






Baked Honey Cornflakes

Ingredients :

100g butter
2 tbsp sugar
2 tbsp honey

4 cups corn flakes
1 cup choco chips (optional)

Method :

1. Melt butter.
2. Add in sugar and honey till dissolved.

3. Add in corn flakes, choco chips and mix well.
4. Spoon into small paper cups and bake at 180 degrees
for 5-7 mins.

Swiss Roll with Hazelnut Ganache

Zhu_Zhu attempted to bake her 2nd swiss roll last nite...
Speaking of more practice to perfect the skill of folding swiss roll..
haiz...Zhu_Zhu's skill needs more than just practice..hah!

Anyway...due to Zhu_Zhu's carelessness...she used the wrong baking tin
for her swiss roll...the tin is too big..therefore..the swiss roll
spreads and is too
thin to roll properly..
resulting in cracks...hmmm...


But nevertheless...after "food-tasting" by her colleagues and hubby...
the taste is still as good!!! :)

Introducing the Swiss Roll with Hazelnut Ganache!!

Ingredients:

4 nos. eggs
100gm. caster sugar
100 gm. cake flour
1/2 tsp. baking powder

1/2 tsp. vanilla essence
50 gm. corn oil

Hazelnut Ganache from Phoon Huat

Method:

(1) Whisk egg for awhile, then add in caster sugar gradually.
(2) Continue beating for 5 mins. Add Vanilla essence.
(3) Fold in the cake flour and baking powder.
(4) Fold in cornoil and pour into a 11" x 14" tray or 10" x 14" tray and
bake at 200C for about 10 mins.
(5) Take out from tray and leave on the wire rack to cool.
(6) Spread ganache onto the cooled swiss roll and roll into a swiss roll.
(7) Slice and serve.

Cheesecake with Strawberry (Konnyaku Version)







Poh Poh bake these before too, using konnyaku jelly instead of agar agar.





Cheesecake with strawberry agar-agar

While Poh_Poh is busy rushing for her CNY orders,
fret not..Zhu_Zhu is here to update some of her recipes...

This entry is an old bake...sorry..Zhu_Zhu is a bit too lazy
recently to bake...but no worries...Zhu_Zhu will be baking soon...
maybe tomorrow for a fren cum colleague :)

Anyway, back to this entry..this is a non-bake cheesecake...
So for those who have no oven at home...this is the recipe you need...
and this cake is popular among kids too!!!





Ingredients:

Base: 10-12 pcs of Digestive Biscuits
60g melted butter

1 box of fresh strawberries
250g cream cheese
50g icing sugar(sifted)
1 tsp vanilla essence
4 strips of gelatine leaf -cut into smaller pcs
40ml water
1 litre of water
1 packet red agar agar mix
200g castor sugar

Steps:
1) Crush digestive biscuits and mix with melted butter.
2)Spread onto a square tin and pressed the mixture onto tin to
form the base
3)Put in freezer to chill for 30mins
4)Beat cream cheese and icing sugar until light and creamy
5)Add in vanilla essence and mix well
6)Dissolve the gelatin leaf with 40ml hot water. Leave till lukewarm
7) Add gelatin to cheese mixture and mix well.
8) Pour the cheese mixture onto the biscuit base and place
sliced strawberries on top
9) Leave in fridge to chill for 3 hrs
10) Boil 1 litre of water, add in 200g sugar and agar agar powder.
Bring all to boil.
11) When agar agar mixture is warm..pour over the
chilled cheese mixture
12)Chill again for 24hrs before consumption :)

Eggless Yellow Cupcakes (Flower Power)!!

First of all, please pardon Zhu Zhu's ugly pix of the cuppies...
She used her hp to take them...juz bear with it ba!! Unless someone
wants to sponser her a new digital camera..hee!!

Anyway these cuppies are EGGLESS! So its just the right treat for
vegetarians as well as peeps who are allergic to EGGS.... :)



They are naked!!!






Ingredients:

  • 300g cake flour sifted
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 350g granulated sugar (300g if you intend to frost the cuppies)
  • 150 g margarine
  • 1 1/2 tsp vanilla essence
  • 1 1/4 cups milk

Makes: About 12 standard cupcakes. Each cupcake serves 1.

Yield more if you make smaller cuppies ;)


instructions

· Preheat oven to 180 degree.

· Sift together flour, baking powder and salt; set aside.

· Cream sugar and butter together until light.

· Add vanilla to creamed mixture and beat until thoroughly mixed.

· Add flour mixture to creamed mixture alternately with milk, beating well after each addition. Continue beating one minute. If mixture too dry, add more milk..

· Pour into cake cups. Bake 20-25 minutes or until toothpick inserted comes out clean.

· Remove and cool completely before decorating.

Soft-centered Chocolate Pudding

Wanna try a recipe that is so easy and yet so sinfully rich??!!
Then you must try this one!!
Very tempting for all chocolate lovers :)
Preparation time is about 20mins and baking time is only 10 mins!!



The melted chocolate will juz OOze out like lava!!!...
Serves 8 to 10 pax
Ingredients:
400g Dark chocolate, chopped
200g unsalted butter, chopped and melted over small heat
6 eggs, lightly beaten
4tbsp plain flour
180g sugar
Ice cream
Method:
  • Pre-heat oven to 200C.
  • Mix chocolate and butter together and melt over small heat.
  • Mix beaten eggs, sugar and flour till well-mix. (Rem to sift flour)
  • Add in the chocolate mixture and combine well.
  • Pour the mixture into ramekins till ¾ full
  • Bake at low heat for 8-10mins.
  • Serve with ice-cream

Simple Curry Puff

You like prata? You like curry puff? Come, lets combine both together.


Ingredients:
  • Prata skin (Kept frozen till you want to use, if not will be soften real fast)

Fillings:

  • Curry paste
  • 2 Potatoes boiled & diced
  • 1 Chicken breast, diced
  • 1 tsp of salt
  • 3 Hard boil eggs
  • 1 tbsp oil

Method:

  1. Heat pan & add oil, stir-fry the curry paste till fragrace
  2. Add in potatoes & chicken
  3. Add in salt
  4. Stir-fry for 5 mins or cooked
  5. Cut egg into 4 halves or to your liking
  6. Preheat oven 150 degC
  7. Place the fillings on the prata skin, amount to your liking and the hard boiled eggs
  8. Fold the prata skin in semi-circle and use a fork to press on the edge to close up the opening
  9. You can even fold to your desired pattern
  10. Into the oven for 20 mins
  11. Ready to serve yummy crispy prata curry puff

Tiramisu

This was the first ever sweet treat that I've learnt...about 6 yrs ago...

This recipe is a sure keeper as its one of the simplest cake
or rather dessert to make..Its most suitable when you are
very tired or busy but still want to make somthing to wow
your frens or guests...

It will take you only at most 20 to 30 mins to prepare
and its non-bake!! But it is a rather expensive treat as the
cheese to use will cost u about $14 bucks!!





Ingredients:

6-8 medium egg yolks
8 tbsp icing sugar
1tsp vanilla essence
1 big tub marscapone cheese
(available from Cold Storage or Phoon Huat(cheaper by $1)
2 packets of sponge fingers
(available from Cold Storage(cheaper) or Phoon Huat)
1 big bowl of black coffee (kopi-o)
2 capfuls of Bailey's or vodka or khalua
Cocoa powder


Method:

1) Cream egg yolks and icing sugar until mixture turns pale yellow.
2) Add in marscapone cheese. Combine and blend till smooth.
3) Add in vanilla essence. Put in fridge to chill.
4) Meanwhile, prepare black coffee and add in Bailey's.
5) Dip sponge fingers in black coffee and lay them in a small container.
6) Add the cream mixture on top of the sponge fingers.
7) Sift cocoa powder on top of the cheese mixture.
8) Repeat step 5 to 7 for second layer.
9) Bring to fridge to chill for at least a day before serving

* Tasted the best when chilled for 3 days :)

Choc Nutella Sponge Cake

Here comes Poh Poh's first post in the new blog of welearnwebake. Thank you Zhu Zhu for the introduction. Today, i want to share with everyone this "Choc Nutella Sponge Cake" that i baked early for my nephew. Please bear with me the creaming of the cake, i need more practice.



Ingredients:

  • 4 eggs
  • 140gm cake flour
  • 200gm caster sugar
  • 3 tbsp cocoa powder
  • 1/2 tsp salt
  • 30gm salad oil
  • 30gm fresh milk

Frosting & Filling:

  • 300ml non-dairy whipping cream
  • nutella choc spread

Method:

  1. Sift cake flour & cocoa powder, set aside.
  2. Grease and line a 20cm round pan, set aside.
  3. Pre-heat oven to 180degC.
  4. Position rack at the lower bottom of the oven.
  5. With an electric mixer, whisk eggs and sugar & salt on HIGH speed for about 5 to 7mins, until the batter double in volume and is ribbon-like (the beater should leave a ribbon-like texture when the batter is lifted up). Turn to LOW speed and whisk for another 1 to 2 mins. Whisking at low speed helps to stabilise the air bubbles in the batter.
  6. Add sifted cake flour into the batter. With a spatula, gently fold in the flour until well blended.
  7. With a spatula, mix about 1/3 of the batter with the salad oil in a separate bowl.
  8. Fold in this mixture into the remaining batter. This method will help to ensure the oil will be fully blended and at the same time will not deflate the batter.
  9. Add in fresh milk and fold in gently with spatula.
  10. Pour the batter into the pan and bake for 35 mins, or until a skewer inserted in the centre comes out clean. Unmold and cool completely.

Assembling the Cake

  1. With an electric mixer, whip the whipping cream still stiff.
  2. Scoup up 1/3 of the cream and add in nutella choc spread. Sweetness to your liking.
  3. Slice the cake horizontally into 3 layers. Place one of the cake layers cut-side down on a cake plate. Spread the whipped cream over the layers.
  4. Spread the whipped cream over the top and side of the cake. Decorate as desired.
